Bring on the heat.

Temperature is a delicate subject. Even if you're off by a few degrees, you can ruin a perfectly good piece of meat. Try these techniques to make sure your next steak, and every steak after that, is cooked to perfection.

No more guessing games.

After one bite of your perfectly timed steak you'll agree a digital read thermometer is worth every penny. But just one or two pokes should do the trick. You want perfection? Stop guessing? Here's the rule book:

  • Rare: 120 degrees core temperature
  • Medium-rare: 126 degrees
  • Medium: 135 degrees
  • Medium Well: 145 degrees
  • Well Done: Let's not even talk about it.
